Today’s recipe was made using a super healthy ingredient: Cassava (also called Yucca Root). In Brazil, cassava is very popular. It is rich in carbohydrates and fibers and it is gluten-free! You can substitute potato, rice and pasta with cassava and it’s gonna be a healthier choice. Its flour is also good for those who are celiac or are trying to keep away from gluten.
The Baked Cassava Fries recipe is super easy and delicious. My husband doesn’t believe that it is baked … hehehehe. Usually I buy frozen cassava at asian markets. If you prefer, you can buy the fresh root in any grocery store.
Baked Cassava Fries Recipe – Ingredients
1 lb peeled cassava
1/4 cup diced fresh parsley
Salt and pepper to taste
Olive Oil Cooking Spray
4 cups boiling water
Baked Cassava Fries Recipe – How to prepare
If you buy the fresh cassava root you’re gonna need to peel it. If you choose the frozen version you should only let it defrost before preparing it. The first step is cutting the cassava into strips.
In a pan, bring the water to a boil and cook the cassava for about 4 minutes.
Drain the water from the cooked cassava.
Line a baking sheet with foil and place the cassava in a single layer. Sprinkle with salt, pepper and parsley and coat the cassava with olive oil cooking spray.
Bake in a 480-degree oven for 20 minutes or until golden-brown.
Serve warm with ketchup or the dip you prefer.
I bought cassava today! Saturday is the day they go to the oven. :)
